This last fact was an eye opener for Beverly Gannon, an award-winning chef on the island of Maui. Having come to Hawaii more than two decades ago by way of Dallas, Texas, she had never before seen such an array of
international dishes served alongside the traditional Thanksgiving turkey or the Christmas prime rib roast. Joining these menu standards were poke (Hawaiian-style seasoned raw fish), Chinese noodles, sushi, lumpia (Filipino spring rolls), sashimi (raw fish), kim chee (Korean pickled cabbage), Portuguese sweet bread rolls, mochi (Japanese steamed rice cakes), and more.
