Garden Symphony
“The garden sings to the kitchen and the kitchen sings to the garden,” says Jesús González, the creative chef at La Cocina Que Canta, the “kitchen that sings.” Born from the philosophy of its mother spa, Rancho La Puerta in Tecate, Mexico, this new culinary school encourages guests to trust their own inner voices—or in this case, palates—using food as their creative material. La Cocina sits at the edge of an elaborate garden, whose rows of vegetables, such as kale, chard, and beets, intermingle with fruit trees bearing apples, plums, and persimmons. Students begin each class plucking from the bounty, feeling the ripeness in their palms, smelling its sweet or tart scent, and listening to its song. Then they make their way to the kitchen, where they chop, dice, and sauté, creating an improvisational melody that resonates in the body.
